Orange Chocolate Chip Waffles

So there I was, in my kitchen at 8:30 on a cold Wednesday night in February, trying to decide what to eat. Suddenly, it came to me – waffles. What is the point of having a waffle iron, flour, an imagination, and hunger if you’re not going to make good use of them? So, here’s what I concocted and they sure are delicious. Let me just lick the chocolate off my fingers and I’ll type the recipe right up…

Orange Chocolate Chip Waffles

  • 2 eggs
  • 1/2 cup milk
  • 2 Tbs Greek or other thick yogurt
  • juice of 1/2 orange
  • zest of 1 orange
  • 1 Tbs neutral oil (safflower, sunflower, soy)
  • 1 1/2-2 Tbs sugar
  • 1/2 cup whole wheat flour
  • 1 cup white flour
  • 2 tsp baking powder
  • 1/4-1/2 cup mini chocolate chips (please use slave-free chocolate!  For more information check out http://slavefreechocolate.org/directory-chocolate/)

Beat together the eggs, milk, yogurt, juice, zest, oil, sugar.  Stir in the flour and baking powder.  Stir in the chocolate chips.  Cook by the cupful in your preheated waffle iron.  Eat hot, plain.  Top with ice cream or whipped cream.  Whatever, they are a delicious and easy treat.
