Blondie Bites

This quick and easy recipe makes a delicious dessert that is not too sweet, incorporates whole wheat, can be made with an assortment of additions to taste, and are small enough that you can have more than one and rich enough that one is actually a treat.

Blondie Bites

  • 3 Tbs butter
  • 3 Tbs sugar
  • 1 Tbs molasses
  • 1 egg
  • 1 tsp vanilla extract or 1 Tbs lemon or orange juice
  • 5 Tbs whole wheat flour
  • 3 Tbs white flour (or you can use all 8 Tbs white whole wheat flour)
  • 1/4 tsp baking powder
  • pinch salt
  • (shredded coconut, chopped nuts, mini-chocolate chips – slave-free of course – to taste)

Well-grease a mini-muffin tin or line the cups with papers.  This recipe will make about 12-14 bites.  In a pot melt the butter over lowish heat so it doesn’t boil.  Remove from heat and stir in the sugar and molasses with a spatula or spoon.  Mix in the egg and extract or juice.  Mix in the flour, baking powder, and salt.  Put the batter into the mini-muffin tin, filling each cup about 3/4 full.  Top with coconut, nuts, chocolate as wanted.  Bake at 350F until they are done, about 8 minutes.  Let cool slightly then remove from pan.  Eat.
